Ode belongs to the latter.

This release is our exploration of a Pacamara natural from El Salvador—a coffee that feels less like a daily ritual and more like a moment worth pausing for.

The Poetry of Pacamara

Pacamara is a varietal known for its striking presence—both in size and in the cup. A cross between Pacas and Maragogype, it produces unusually large beans and an expansive, expressive flavor profile.

Grown at elevations between 1,200–1,600 meters, slower cherry maturation allows sugars to fully develop—resulting in a coffee that is naturally sweet, structured, and layered.

But what truly defines this coffee is the natural process.

The Role of the Natural Process

Unlike washed coffees, where the fruit is removed before drying, this coffee is dried with the cherry intact. This extended contact between fruit and seed creates depth, texture, and a distinct fruit-forward character.

In Ode, that translates to:

  • Ripe peach and mango sweetness
  • Pineapple-like brightness
  • Jammy, dessert-like depth
  • A creamy, juicy body with a long, smooth finish. It is vibrant, but never overwhelming—balanced by a soft acidity and a rounded mouthfeel.

The Farm & The People Behind It

Ode comes from Finca La Vela in El Salvador, produced by the Borgonovo family, whose roots in coffee go back to 1971.

What makes this coffee special isn’t just the varietal or process—it’s the system behind it.

The Borgonovo family operates with an integrated approach to coffee production, maintaining control across farming, milling, and export. This level of involvement ensures consistency and quality at every stage—from harvest to shipment.

Their broader work through San Carlos Estate reflects a deeper commitment—not just to coffee, but to community. The estate emphasizes:

  • Sustainable and environmentally responsible farming
  • Long-term relationships with producers
  • Investment in worker well-being, housing, healthcare, and education

It’s a reminder that great coffee doesn’t happen in isolation—it’s built on systems of care, knowledge, and continuity.
