🌱 From Finca Aurora to Your Cup: The Story of Sabio Coffee

At Sabio Coffee, every cup carries a story — of family, tradition, and decades of dedication to growing coffee with care. Our latest lot comes from Finca Aurora, perched at 1,200–1,400 meters above sea level in Matagalpa, Nicaragua, where volcanic soils and high altitude create ideal conditions for specialty Arabica coffee.

A Family Legacy in Every Bean

The journey of Finca Aurora began with Enrique Ferrufino and Silvia Norori, who acquired the farm in 2004. Though both were doctors, Enrique’s roots were in coffee — his grandfather was a small coffee producer, and Enrique grew up on a farm. With no roads and minimal infrastructure, they began the long process of rebuilding, nurturing, and expanding the farm, guided by a vision of quality, sustainability, and community.

Over time, Finca Aurora became the hub for several neighboring farms under the Sabio Coffee brand, ensuring that all processing could be handled with care and precision. Today, their children manage the operations, carrying forward their parents’ commitment to coffee excellence, environmental stewardship, and social responsibility.

Coffee with Care: Parainema & Icatú Washed

The lot we source from Finca Aurora includes Parainema and Icatú varieties, fully washed and processed with meticulous attention:

  • Harvesting & Fermentation: Cherries are hand-picked at peak ripeness, floated, depulped, and fermented in open tanks for 36 hours.
  • Washing & Drying: The beans are floated again, washed with clean water, and sun-dried on patios for 12 days.
  • Resting: After drying, they rest for 10 weeks before hulling, allowing flavors to fully develop.

The result? A cup with vibrant tasting notes of orange, milk chocolate, and lychee, capturing both the terroir and the careful craftsmanship behind every bean.

Sustainability at the Core

At Sabio, coffee cultivation is as much about protecting the planet as it is about creating exceptional flavor. Finca Aurora practices shade-grown farming, preserving native trees that support biodiversity and healthy soils. Renewable energy powers the farm, including hydroelectric generation, and the operation is carbon neutral, reflecting a deep commitment to minimizing environmental impact. Herbicides are avoided, water is carefully conserved, and processing byproducts are reused as natural fertilizers, keeping the farm and surrounding ecosystem healthy.
