What if decaf didn't have to taste like decaf?
Myth begins with carefully selected ripe Red and Yellow Caturra cherries from El Vergel Estate in Fresno, Tolima, Colombia, where producers Elías and Shady Bayter have spent years exploring innovative approaches to coffee cultivation and processing.
The cherries undergo a 48–60 hour anaerobic fermentation, followed by a carefully controlled natural drying process. The result is a coffee with remarkable complexity and a vibrant fruit character—think passion fruit, strawberry and tropical fruit, balanced by citrus, cacao, coconut and honey.
The coffee is then decaffeinated using the EA Sugarcane process at Descafecol in Manizales, Colombia. Instead of synthetic chemicals, naturally derived ethyl acetate from sugarcane is used to selectively remove caffeine. The process is designed to preserve the coffee's natural aromas, flavors and soluble compounds, leaving the beans 99% caffeine-free.

Our Myth Colombian Decaf comes from the Mujeres Berruecos project in Nariño, Colombia, uniting 23 women producers farming at 1,800–2,100 masl. Led by Francy Castillo in the Arboleda community, this initiative supports women with training, resources, and direct access to specialty coffee markets.
